Paprika Tilapia with Broccoli and Herb Pasta
Tender Paprika Tilapia over Fresh Broccoli and Herb-Infused Pasta
Ingredients:
4 tilapia fillets
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons olive oil
2 cups broccoli florets
8 oz (225g) pasta (penne or fusilli)
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
2 tablespoons lemon juice
1/4 cup grated Parmesan cheese (optional)
1/4 cup reserved pasta water
Directions:
Cook the pasta according to package directions. Reserve 1/4 cup of the pasta water before draining. Set aside.
While the pasta cooks, season tilapia fillets evenly with smoked paprika, garlic powder, onion powder, salt, and pepper.
In a large skillet, heat olive oil over medium heat. Cook the tilapia fillets for 3-4 minutes per side, or until golden and cooked through. Remove from the skillet and keep warm.
In the same skillet, add broccoli florets and a splash of reserved pasta water. Sauté for 3-4 minutes until bright green and tender-crisp.
Add the cooked pasta to the skillet with the broccoli. Toss with parsley, basil, lemon juice, and Parmesan cheese if using. Add more reserved pasta water if needed to loosen the sauce.
Serve the pasta and broccoli on plates topped with the paprika tilapia. Garnish with extra herbs if desired.
