Traditional British Fruit Loaf 🍞🍇
A moist, spiced tea loaf packed with plump dried fruit—perfect sliced and buttered with a cuppa. No kneading, no fuss, just pure nostalgia!
Ingredients:
For the Fruit Mix:
🍇 Mixed dried fruit: 300g (raisins, sultanas, currants)
☕ Strong black tea: 300ml, hot (or apple juice for caffeine-free)
🍬 Light brown sugar: 100g
🍯 Golden syrup: 2 tbsp
🍂 Mixed spice: 1 tsp
🍋 Orange: 1 (zest only)
For the Loaf:
🌾 Self-raising flour: 225g
🥚 Egg: 1, beaten
Method:
1️⃣ 🍇 Soak the fruit:
Combine dried fruit, hot tea, sugar, syrup, spice, and orange zest in a bowl. Cover and leave overnight (or at least 4 hours).
2️⃣ 🔥 Bake:
Preheat oven to 160°C (fan). Grease a 900g loaf tin and line with parchment.
Stir flour and egg into the fruit mix until just combined. Pour into the tin.
Bake for 1 hour–1 hour 15 mins until a skewer comes out clean.
3️⃣ ❄️ Cool:
Let cool in the tin for 15 mins, then transfer to a wire rack.
