Vanilla Cupcakes

Ingredients

1 1/2 cups (190g) all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup (115g) unsalted butter, softened

1 cup (200g) granulated sugar

2 large eggs

2 tsp vanilla extract

1/2 cup (120ml) whole milk

Instructions

1. Preheat and Prepare:

Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

2. Mix Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Cream Butter and Sugar:

In a large bowl, beat the softened butter and sugar together until light and fluffy (about 3 minutes).

Add the eggs, one at a time, mixing well after each addition.

4. Add Vanilla and Dry Ingredients:

Stir in the vanilla extract.

Add the dry ingredients to the butter mixture in three parts, alternating with the milk. Start and end with the flour mixture. Mix until just combined (don’t overmix!).

5. Bake:

Divide the batter evenly among the cupcake liners (about 2/3 full).

Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.

Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
