Ingredients:
For the cheesecake filling:
- 115g (4 oz) cream cheese, softened
- 2 tbsp powdered sugar
- 1/4 tsp vanilla extract
For the cookie dough:
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted and slightly cooled
- 1 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg + 1 egg yolk
- 1 tbsp vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
Instructions:
1. In a small bowl, mix the cream cheese, powdered sugar, and vanilla until smooth. Scoop small spoonfuls onto a parchment-lined baking sheet and freeze for 30–45 minutes until firm.
2. In a medium bowl, combine flour, baking soda, and salt.
3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add in the egg, egg yolk, and vanilla, mixing until well combined.
4. Gradually stir the dry ingredients into the wet mixture, then gently fold in the chocolate chips. Chill the dough for 20–30 minutes.
5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
6. Scoop a tablespoon of cookie dough, flatten it, place a frozen cheesecake dollop in the center, and cover it with another tablespoon of dough, sealing the edges well.
7. Arrange the cookies on the baking sheet spaced a few inches apart. Bake for 11–13 minutes or until the edges are golden and the centers look just set.
