2 boneless, skinless chicken breasts, sliced

1 cup heavy cream

2 medium Yukon Gold potatoes, cut into ยฝ-inch cubes
1 tbsp olive oil
2 cloves garlic, minced
ยฝ tsp dried rosemary
ยฝ tsp dried thyme
Salt & freshly cracked black pepper to taste

ยผ cup fresh basil leaves ๐ฟ
2 tbsp grated Parmesan cheese ๐ง
1 clove garlic, minced
2 tbsp olive oil
2 tbsp heavy cream

Salt & freshly cracked black pepper to taste

Instructions
1. Prepare the Roasted Potatoes
Preheat oven to 425ยฐF (220ยฐC).
In a bowl, toss potato cubes with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20โ25 minutes, or until golden brown and crispy, flipping halfway through.
2. Sautรฉ the Garlic Chicken and Mushrooms
Heat olive oil in a large skillet over medium-high heat.
Add sliced chicken and cook until browned and cooked through. Remove chicken from the skillet and set aside.
Add minced garlic to the skillet and sautรฉ until fragrant.
Add sliced mushrooms and cook until softened and lightly browned.
Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and parsley until melted and smooth. Season with salt and pepper.
