Creamy Chicken Chorizo Pasta
🍴 Serves: 4
⏱️ Prep Time: 10 mins | Cook Time: 25 mins
✅ Ingredients:
12 oz (340g) pasta (penne, rigatoni, or fettuccine work well)

2 tbsp olive oil

2 chicken breasts, boneless and skinless, cut into bite-sized pieces

4 oz (115g) chorizo sausage, casings removed, crumbled

1 small onion, diced

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth (or as needed for consistency)

1/2 cup parmesan cheese, grated

1/2 tsp paprika

1/4 tsp chili flakes (optional, for extra spice)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

👨‍🍳 Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain, reserving 1/2 cup of pasta water, and set it aside.

2. Cook the Chicken and Chorizo:
Heat the olive oil in a large skillet over medium-high heat.

Add the chicken pieces to the skillet and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.

In the same skillet, add the crumbled chorizo and cook, breaking it up into smaller pieces, until browned and cooked through, about 4-5 minutes. Remove the chorizo and set it aside with the chicken.

3. Sauté the Onions and Garlic:
In the same skillet, add a little more olive oil if needed. Add the diced onion and sauté until softened, about 2-3 minutes.

Add the minced garlic and cook for another 30 seconds, until fragrant.

4. Make the Creamy Sauce:
Pour in the heavy cream and chicken broth, scraping up any browned bits from the bottom of the pan.

Stir in the paprika and chili flakes (if using) and bring the mixture to a simmer. Let it cook for 3-4 minutes until the sauce thickens slightly.

5. Combine the Pasta and Meats:
Add the cooked pasta, chicken, and chorizo back into the skillet, tossing everything together to coat it in the creamy sauce. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.

Stir in the grated parmesan cheese until it melts and the sauce becomes smooth.

6. Season and Serve:
Taste and adjust the seasoning with more salt, pepper, or chili flakes if desired.

Garnish with fresh chopped parsley and serve immediately.

🍽️ To Serve:
This Creamy Chicken Chorizo Pasta is perfect on its own or served with a side of garlic bread or a fresh green salad.

📝 Tips:
Spiciness: Adjust the amount of chorizo or chili flakes to make the dish as spicy or mild as you like.

Cheese: You can substitute parmesan with other cheeses like Pecorino Romano or a combination of mozzarella and cheddar for extra creaminess.

Add-ins: Feel free to add veggies like spinach, bell peppers, or mushrooms for more color and flavor.

Enjoy this creamy, flavorful Chicken Chorizo Pasta for a satisfying and comforting meal! 🍝🧀🌶️
