Deliciously Baked Cauliflower Chickpea Bites Perfect for Meals 💪👍

Ingredients:
1 medium head cauliflower, cut into florets (about 3 cups)
1 can (15 oz / 425g) chickpeas, rinsed and drained well
1/2 cup / 45g breadcrumbs (use gluten-free if needed, or almond flour for paleo/keto)
1/4 cup / 15g fresh parsley or cilantro, chopped
2 cloves garlic, minced
1 small shallot or 1/4 onion, finely chopped
1 teaspoon / 3g ground cumin
1/2 teaspoon / 1.5g smoked paprika
1/2 teaspoon / 3g sea salt
1/4 teaspoon / 0.5g black pepper
1 flax egg (1 tbsp ground flax + 3 tbsp water, rested 5 mins) or 1 large egg (if not vegan)
Olive oil for brushing (optional)

Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Steam or boil the cauliflower florets until very tender. Drain thoroughly and let cool slightly. Squeeze out any excess moisture if possible.
3. Pat the rinsed chickpeas very dry with paper towels.
4. In a large bowl, mash the cooked cauliflower and dried chickpeas together with a potato masher or fork until mostly broken down but still retaining some texture.
5. Add the breadcrumbs/almond flour, chopped parsley/cilantro, minced garlic, chopped shallot/onion, cumin, smoked paprika, salt, pepper, and prepared flax egg (or regular egg) to the bowl.
6. Mix everything together until well combined. The mixture should hold together when pressed. If too wet, add a bit more breadcrumbs/flour; if too dry, add a tablespoon of water.
7. Using damp hands, form the mixture into 8-10 patties, about 1/2 inch (1 cm) thick. Place them on the prepared baking sheet.
8. Lightly brush or spray the tops of the patties with olive oil (optional, helps with browning).
9. Bake for 15-20 minutes, then carefully flip the patties and bake for another 10-15 minutes, or until golden brown, crispy on the outside, and firm.
10. Serve warm as burgers, side dishes, or crumbled into salads.
