Cherry Mash Truffles
Ingredients:
2 cups powdered sugar
1/4 cup unsalted butter, softened
1/4 cup heavy cream
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup finely chopped maraschino cherries (drained well)
2 cups semi-sweet chocolate chips
1 tablespoon coconut oil or shortening
1/4 cup crushed chocolate candy or sprinkles (optional, for topping)
Directions:
In a large mixing bowl, beat the butter, powdered sugar, heavy cream, vanilla, and almond extract until smooth.
Stir in the chopped maraschino cherries until fully incorporated.
Chill mixture in the fridge for 30–45 minutes, until firm enough to roll.
Scoop and roll into 1-inch balls. Freeze for 20 minutes.
In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
Dip each cherry ball into melted chocolate and place on parchment paper.
Immediately top with crushed chocolate candy or sprinkles if using.
Refrigerate until chocolate is set.

Tips:
