Easy Harry Potter Butterbeer Cupcakes
Ingredients (Makes 12 cupcakes):
For the cupcakes:
• 1 box vanilla cake mix
• 1 cup cream soda
• ½ cup (1 stick) unsalted butter, melted
• 3 eggs
For the frosting:
• 1 cup (2 sticks) unsalted butter, softened
• 1 ½ cups powdered sugar
• ¼ cup butterscotch sauce (plus extra for topping)
• 1 tsp vanilla extract
Instructions:
1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
2. Make the batter: In a large bowl, mix the cake mix, cream soda, melted butter, and eggs until smooth.
3. Bake: Fill cupcake liners ¾ full. Bake for 18–20 minutes. Let them cool completely.
4. Frost: Beat butter until creamy, then add powdered sugar, butterscotch sauce, and vanilla. Beat until fluffy.
5. Decorate: Pipe the frosting onto the cupcakes and drizzle with more butterscotch sauce.
