Easy Homemade Dark Chocolate Date Bars Packed with Goodness 😋❤️
Ingredients:
1 cup / 175g Medjool dates, pitted
1/2 cup / 70g raw almonds or walnuts
1/4 cup / 35g rolled oats (use certified gluten-free if needed)
3 tablespoons / 18g unsweetened cocoa powder
2 tablespoons / 16g chia seeds or flax seeds
1 tablespoon / 15ml melted coconut oil
1 teaspoon / 5ml vanilla extract
Pinch of sea salt
Optional: 2 oz / 55g dark chocolate (70%+ cacao), melted for topping
Directions:
1. If dates are dry, soak them in warm water for 10 minutes, then drain well.
2. Add pitted dates, almonds/walnuts, oats, cocoa powder, chia/flax seeds, melted coconut oil, vanilla extract, and salt to a food processor.
3. Process until the mixture starts to clump together and forms a sticky dough. Scrape down the sides as needed.
4. Line an 8x4 inch (20x10 cm) loaf pan or a small square container with parchment paper, leaving some overhang for easy removal.
5. Press the mixture firmly and evenly into the prepared pan. Use the bottom of a glass or your hands.
6. If using, drizzle the melted dark chocolate over the top and spread evenly.
7. Place the pan in the freezer for at least 30 minutes or the refrigerator for 1-2 hours to set.
8. Once firm, lift the slab out using the parchment paper overhang and cut into bars or squares.
9. Store in an airtight container in the refrigerator.
