OMG DON'T LOSE THIS RECIPE! This hearty slow cooker beef and barley stew is a comforting, savory dish packed with tender beef, wholesome barley, and flavorful vegetables. It's the perfect meal for a cozy evening.

Ingredients:
1 ½ lbs beef stew meat, cut into bite-sized pieces
1 cup pearl barley, rinsed
4 cups beef broth
1 cup water
2 carrots, peeled and sliced
2 celery stalks, chopped
1 onion, chopped
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes, undrained
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Prepare the beef: Season the beef with salt and pepper. If you have time, sear the beef in a skillet with a little olive oil over medium-high heat until browned on all sides (optional but adds extra flavor).
Assemble the stew: Add the beef, pearl barley, beef broth, water, carrots, celery, onion, garlic, diced tomatoes (with their juice), Worcestershire sauce, thyme, rosemary, and bay leaves to your slow cooker.
Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the barley is cooked through.
Season: Remove the bay leaves and adjust seasoning with more salt and pepper if needed.
Serve: Garnish with fresh parsley if desired and serve hot with crusty bread or rolls.
Helpful Tips:
For a thicker stew, stir in 1-2 tbsp of flour or cornstarch mixed with cold water during the last 30 minutes of cooking.
You can substitute pearled barley with quinoa or farro for a different texture.
