Ingredients:

8 lamb chops
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp Dijon mustard
1 tbsp whole grain mustard
1/4 cup heavy cream
2 tbsp fresh thyme leaves, chopped
1 clove garlic, minced
1/2 cup chicken broth
1 tbsp butter
Instructions:

Season lamb chops: Sprinkle the lamb chops with salt and pepper on both sides.
Cook lamb: Heat olive oil in a large skillet over medium-high heat. Cook the lamb chops for about 3-4 minutes per side, or until they reach your desired doneness. Remove from skillet and set aside.
Make sauce: In the same skillet, reduce heat to medium and add garlic. Sauté for 1 minute until fragrant. Stir in chicken broth, scraping up any browned bits. Add Dijon mustard, whole grain mustard, and fresh thyme. Let simmer for 2 minutes.
Finish sauce: Stir in heavy cream and butter, letting the sauce thicken slightly. Season with salt and pepper to taste.
Serve: Spoon the mustard thyme sauce over the lamb chops and serve hot.
