Preparation Steps:
1. Spread a thin layer of butter on one side of each bread slice.
2. Sprinkle garlic powder (if using) over the buttered sides.
3. On the unbuttered side of 4 bread slices, layer 1/2 cup mozzarella cheese, a handful of spinach leaves, and 2 tablespoons of sun-dried tomatoes.
4. Top with another 1/2 cup mozzarella cheese and the remaining bread slices, buttered side facing out.
5. Heat a skillet over medium heat and place a sandwich in the skillet.
