Pecan Pie Balls (No-Bake)
Ingredients:
- 1 cup pecans, finely chopped
- 1 cup graham cracker crumbs
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Directions:
1. In a large bowl, combine the chopped pecans, graham cracker crumbs, powdered sugar, ground cinnamon, and salt.
2. Add the melted butter, sweetened condensed milk, and vanilla extract to the dry ingredients. Mix well until a sticky dough forms.
3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
4. Refrigerate the balls for at least 30 minutes to firm up.
5. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring between each, until smooth and melted.
6. Dip each pecan ball into the melted chocolate, allowing excess chocolate to drip off, then place back on the parchment paper.
7. Refrigerate the chocolate-coated balls until the chocolate is set, about 15-20 minutes.
8. Serve chilled or at room temperature.
