Orange Soda Cupcakes with Cream Cheese Frosting. The soda gives them a delightful orange flavor, and the cream cheese frosting adds a perfect balance of tangy sweetness.
Homemade Orange Soda Cupcakes
Ingredients:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1/2 cup orange soda (like Fanta or Crush)
optional 1-2 squeeze of orange food color for a darker orange
Zest of 1 orange (optional, for extra orange flavor)
Cream Cheese Frosting
Ingredients:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
3-4 cups powdered sugar (depending on desired consistency)
1 tsp vanilla extract
1-2 tbsp heavy cream or milk (to adjust frosting consistency)
Pinch of salt
Instructions:
For the cupcakes:
Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate large bowl, cream the butter and sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually mix in the dry ingredients to the wet ingredients, alternating with the orange soda. Begin and end with the dry ingredients, mixing until just combined. Don’t overmix!
Fold in the orange zest, if using, for an extra burst of orange flavor.
Spoon the batter into the cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Let the cupcakes cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
For the cream cheese frosting:
In a large bowl, beat together the cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, until the frosting reaches your desired sweetness and consistency. Add a tablespoon of heavy cream or milk to adjust the texture if needed.
Stir in the vanilla extract and a pinch of salt to balance the sweetness.
Once the cupcakes are completely cool, frost them with the cream cheese frosting. You can spread it with a knife or pipe it on with a piping bag for a more decorative touch.
Optional Garnish:
For extra flavor and decoration, you can top the cupcakes with orange zest, orange slices, or even orange candy (like candy oranges or orange sprinkles).
