Who remembers Sunshine Lemon Cooler Cookies?
The original Sunshine Lemon Cooler Cookies were discontinued in the mid-1990s. The parent company, Sunshine Biscuits, was purchased by the Keebler Company in 1996, and Keebler discontinued the popular cookies along with several other products. :( Why Keebler??

Lemon Cooler Cookies #refreshing
1/2 cup butter, room temperature or shortening
1/2 cup powdered sugar
1/3 cup granulated sugar
ΒΌ teaspoon salt
1 large egg
1/2 tsp. vanilla extract
1/2 tsp. lemon extract
1 lemon zested and 1/2 Tablespoon of fresh lemon juice
1 Tbsp. water
1 1/2 cups all purpose flour
1 1/2 tsp. baking soda
Preheat the oven to 325 degrees F.
In a mixing bowl, cream together butter, sugars, and salt. Add egg and mix, add extracts, lemon zest, lemon juice, and water mixing well. Sift together flour and baking soda and add to creamed mixture until soft dough forms. Using a teaspoon or a small cookie scoop form dough into balls. Place on lightly greased baking sheet. Flatten each cookie slightly with the bottom of a greased glass. Bake for about 15 minutes, till cookies are lightly browned around the edges.
Prepare Lemon Sugar cookie coating
1 cup powdered sugar + 1 tsp. unsweetened lemon flavored Kool-Aid powder.
Remove cookies from oven and allow to cool slightly to handle them, but while still warm roll in lemon sugar mixture.
