Garlic Butter Salmon with Spinach Orzo
Succulent Garlic Butter Salmon on a Bed of Creamy Spinach Orzo
Ingredients:
4 salmon fillets (about 6 oz each)
3 tablespoons unsalted butter
3 garlic cloves, minced
1 tablespoon olive oil
1 cup orzo pasta
3 cups fresh spinach, chopped
2 cups chicken or vegetable broth
1/2 cup grated Parmesan cheese
Juice of 1/2 lemon
1 tablespoon fresh parsley, chopped
Salt and black pepper, to taste
Directions:
Cook the orzo in broth according to package instructions until al dente. Drain any excess liquid if needed.
In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper, then sear skin-side down for 4–5 minutes. Flip and cook for another 3–4 minutes until golden and cooked through. Remove salmon and set aside.
In the same skillet, melt butter and sauté garlic for 1 minute until fragrant. Add spinach and cook until wilted.
Stir in the cooked orzo and Parmesan cheese, mixing until creamy. Add lemon juice and parsley.
Place salmon fillets on top of the spinach orzo. Garnish with extra parsley and serve warm.
