Chorizo and Halloumi Pasta
This flavorful pasta dish brings together the rich, smoky taste of chorizo and the salty, squeaky texture of halloumi cheese. 250g penne pasta
1 teaspoon olive oil
1 red onion, chopped
2 garlic cloves, chopped
2 teaspoons smoked paprika
1 teaspoon oregano
225g halloumi, cut into cubes
200g chorizo, sliced
500ml passata
2 teaspoons sugar
3 tablespoons double cream
50g Grana Padano, grated
2 tablespoons parsley, chopped
Directions:
1. Heat oil in a pan, cook onion and garlic for 3-4 minutes. Boil pasta until al dente. Drain, reserving 1 cup of cooking water.
2. Add paprika and oregano, cook for 1 minute.
3. Add halloumi and chorizo, fry until halloumi turns golden.
4. Stir in passata, sugar, and cream. Simmer for 10 minutes.
5. Stir in pasta, warm through, and serve with parsley and grated cheese.
