Pineapple Cream Cheese Cobbler
Ingredients:
- 1 stick (1/2 cup) butter
- 1 egg, lightly beaten
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cans (20 oz each) pineapple chunks, drained
- 8 oz cream cheese, cut into small pieces
Directions:
1. Preheat oven to 350°F (175°C).
2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
3. Add the butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
4. Stir in the milk and egg until just combined.
5. Spread the batter evenly into a greased 9x13 inch baking dish.
6. Distribute the drained pineapple chunks evenly over the batter.
7. Scatter the cream cheese pieces on top of the pineapple.
8. Bake for 40-45 minutes or until the cobbler is golden brown and a toothpick inserted into the batter comes out clean.
9. Let cool slightly before serving.
