Lemon Blueberry Cheesecake Bars
Ingredients:
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons melted butter
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 tablespoons all-purpose flour
- 2 large eggs
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Directions:
1. Preheat oven to 325°F (163°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
2. In a medium bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
3. Bake crust for 10 minutes, then remove from oven and let cool.
4. In a large bowl, beat cream cheese until smooth and creamy. Add ½ cup sugar and flour, mixing until well combined.
5. Beat in eggs one at a time, then add lemon juice, lemon zest, and vanilla extract. Mix until smooth.
6. Gently fold in blueberries, being careful not to crush them.
7. Pour the filling over the cooled crust and spread evenly.
8. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
9. Remove from oven and allow to cool to room temperature, then refrigerate for at least 4 hours or overnight before cutting into bars.
