Maraschino Cherry Cake Recipe
Ingredients:
For the Cake:
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1/2 teaspoon almond extract
• 1 1/2 cups all-purpose flour
• 1 3/4 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup milk
• 1 cup maraschino cherries, chopped (drained and patted dry)
For the Frosting:
• 1/2 cup unsalted butter, softened
• 3 cups powdered sugar
• 1/4 cup maraschino cherry juice
• 1 teaspoon vanilla extract
• Extra maraschino cherries for decoration (optional)
Directions:
1. Preheat the Oven:
o Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. Prepare the Cake Batter:
o In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
o Add the eggs, vanilla extract, and almond extract, and mix until well combined.
o In another bowl, whisk together the flour, baking powder, and salt.
o Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
o Gently fold in the chopped maraschino cherries.
3. Bake the Cake:
o Pour the batter into the prepared cake pan and spread it evenly.
o Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
4. Prepare the Frosting:
o In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, cherry juice, and vanilla extract, mixing until smooth and fluffy.
5. Frost the Cake:
o Once the cake is completely cool, spread the frosting evenly over the top and sides. Decorate with additional maraschino cherries if desired.
6. Serve:
