Roasted Mushroom and Thyme Flatbread with Mozzarella
Ingredients:
2 store-bought flatbreads or naan (about 250 g total)
300 g mushrooms, sliced (about 3 cups)
2 tablespoons olive oil (30 ml)
2 garlic cloves, minced (6 g)
1 teaspoon fresh thyme leaves (2 g)
½ teaspoon salt (3 g)
¼ teaspoon black pepper (1 g)
150 g mozzarella cheese, shredded (1 ½ cups)
30 g Parmesan cheese, grated (¼ cup)
Fresh thyme sprigs, for garnish
Directions:
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Toss mushrooms with olive oil, garlic, thyme, salt, and pepper. Roast for 15–18 minutes until golden and tender.
Place flatbreads on the baking sheet, sprinkle evenly with mozzarella, and top with roasted mushrooms.
Bake for 8–10 minutes until cheese is melted and edges are crisp.
Sprinkle with Parmesan and garnish with fresh thyme before serving warm.
