Ingredients:
1 ½ cups cottage cheese
2 large eggs
2 tbsp honey or maple syrup
½ tsp vanilla extract
½ cup rolled oats
1 tsp baking powder
1 cup fresh or frozen blueberries
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C) and grease a baking dish.
Prepare the Batter:
In a blender, combine cottage cheese, eggs, honey, vanilla extract, oats, and baking powder. Blend until smooth.
Add Blueberries:
Fold in half of the blueberries into the batter.
Bake:
Pour the batter into the greased baking dish and top with the remaining blueberries.
Bake for 25–30 minutes or until the top is golden and set.
