Death by Chocolate No-Bake Cheesecake Bars 🍫🍰

Ingredients:

For the Chocolate Cookie Crust:
24 chocolate sandwich cookies (Oreos or similar)
5 tablespoons unsalted butter, melted

For the Chocolate Cheesecake Layer:
8 oz (226g) cream cheese, softened
Β½ cup powdered sugar
1 teaspoon vanilla extract
1ΒΌ cups semi-sweet chocolate chips, melted and cooled slightly
1 cup heavy whipping cream, cold

For the Chocolate Ganache Topping:
ΒΎ cup semi-sweet chocolate chips
β…“ cup heavy whipping cream

Optional Toppings:
Mini chocolate chips
Chocolate curls
Whipped cream
Crushed Oreos

Directions:

Prepare the crust: Add chocolate sandwich cookies to a food processor and pulse into fine crumbs. Combine with melted butter until evenly coated. Press firmly into the bottom of an 8x8-inch pan lined with parchment paper. Chill in the fridge while preparing the filling.

Make the chocolate cheesecake layer: In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until fluffy. Mix in the melted chocolate until combined.

In a separate bowl, beat cold heavy cream to stiff peaks. Gently fold the whipped cream into the chocolate cream cheese mixture until fully incorporated and smooth. Spread evenly over the chilled crust and return to the fridge.

Make the ganache: Heat the heavy cream in a small saucepan or microwave until just about to boil. Pour over chocolate chips and let sit 2 minutes, then stir until smooth and glossy.

Pour ganache over the cheesecake layer and spread evenly. Chill for at least 4 hours, or until fully set.

Top with optional mini chips, curls, crushed cookies, or whipped cream before slicing.
