Ingredients:
For the Shortcake Crust:
1 1/2 cups graham cracker crumbs
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
1/4 cup heavy cream
For the Strawberry Topping:
3 cups fresh strawberries, hulled and sliced
2 tablespoons granulated sugar
1 tablespoon lemon juice
Instructions:
Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan and set aside.
⏳ Duration: 5 minutes
In a medium bowl, combine the graham cracker crumbs, flour, sugar, and baking powder. Stir in the melted butter until the mixture is well combined and crumbly.
⏳ Duration: 3 minutes
Press the crumb mixture into the bottom of the prepared springform pan, creating an even layer. Bake for 10-12 minutes until the crust is lightly golden. Remove from the oven and let it cool while preparing the cheesecake filling.
⏳ Duration: 15 minutes (baking) + 5 minutes (cooling)
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
⏳ Duration: 5 minutes
Add the sour cream and heavy cream to the mixture and blend until smooth.
⏳ Duration: 3 minutes
Pour the cheesecake batter over the cooled crust in the springform pan. Tap the pan on the counter to remove any air bubbles.
⏳ Duration: 2 minutes
Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is almost set (it should still slightly jiggle). Turn off the oven and let the cheesecake cool for 1 hour inside the oven with the door slightly ajar.
⏳ Duration: 1 hour (cooling in the oven)
After the cheesecake has cooled, refrigerate it for at least 4 hours, or preferably overnight, to let it set completely.
⏳ Duration: 4-12 hours (chill time)
While the cheesecake is chilling, prepare the strawberry topping by tossing the sliced strawberries with sugar and lemon juice. Let them sit for 15 minutes to release their juices.
⏳ Duration: 15 minutes
Once the cheesecake has set, top it with the macerated strawberries. Slice and serve!
