CAJUN GARLIC BUTTER CHICKEN BITES WITH CAFETERIA NOODLES
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz cafeteria-style egg noodles
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook the cafeteria noodles according to package instructions. Drain and set aside.
In a large skillet, heat olive oil and butter over medium-high heat. Season the chicken bites with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
Add the chicken pieces to the skillet and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
Add the chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 3-4 minutes until the sauce thickens.
Stir in the Parmesan cheese and season with additional salt and pepper if needed.
Return the chicken bites to the skillet, then add the cooked cafeteria noodles, tossing everything together to coat in the creamy sauce.
Garnish with fresh parsley before serving.
