Homemade Wonton Soup

1 tablespoon grated fresh ginger

2 cloves garlic, minced

2 green onions, finely chopped

1 egg, lightly beaten

1/2 teaspoon salt

1/4 teaspoon white pepper

30-40 wonton wrappers

For the Soup:

6 cups chicken broth

1 tablespoon soy sauce

1 teaspoon sesame oil

1-inch piece fresh ginger, sliced

2 cloves garlic, smashed

2 cups baby bok choy or spinach, chopped

2 green onions, sliced for garnish

Salt and white pepper to taste

Directions:

1. Prepare the Wonton Filling:

In a mixing bowl, combine the ground chicken, chopped shrimp (if using), soy sauce, sesame oil, grated ginger, minced garlic, chopped green onions, beaten egg, salt, and white pepper. Mix well until all ingredients are thoroughly combined.

2. Assemble the Wontons:

Place a wonton wrapper on a clean, dry surface.

Spoon about 1 teaspoon of the filling into the center of the wrapper.

Moisten the edges of the wrapper with water.

Fold the wrapper diagonally to form a triangle, pressing the edges to seal and ensuring there are no air pockets.

Bring the two opposite corners of the triangle together, overlapping them slightly, and press to seal.

Repeat with the remaining wrappers and filling.

3. Prepare the Soup Base:

In a large pot, bring the chicken broth to a boil.

Add the sliced ginger and smashed garlic cloves to the broth. Reduce the heat and let it simmer for about 5 minutes to infuse the flavors.

Remove and discard the ginger and garlic from the broth.

Stir in the soy sauce and sesame oil.

4. Cook the Wontons:

Gently add the assembled wontons to the simmering broth.

Let them cook for 4-5 minutes, or until the wontons float to the surface and the filling is cooked through.

5. Add the Greens:

Add the chopped baby bok choy or spinach to the soup.

Allow the greens to wilt and cook for about 2 minutes.

6. Season and Serve:

Taste the broth and adjust the seasoning with salt and white pepper as needed.

Ladle the soup into bowls, ensuring each bowl gets a generous amount of wontons and greens.

Garnish with sliced green onions.

Serve hot.
