Comfort Food at Its Best: Baked Mashed Potatoes with a Twist!
Ingredients:
3 lbs Yukon gold potatoes, peeled and cubed
1/2 cup cream cheese
1/2 cup sour cream
1/4 cup butter
2 eggs, lightly beaten
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1 cup shredded mozzarella cheese
Directions:
Boil potatoes until tender. Drain and mash with cream cheese, sour cream, butter, and seasonings.
Let the mixture cool slightly, then mix in the eggs.
Spoon into a greased 9x13 baking dish and sprinkle mozzarella over the top.
Bake at 350°F (175°C) for 25–30 minutes, until golden and slightly puffed.
