🧁 Cinnamon Roll Muffins 🌟
Ingredients
For the Muffins:
1 3/4 cups (220g) all-purpose flour
1/2 cup (100g) granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup (120ml) milk
1/4 cup (60ml) vegetable oil or melted butter
1 large egg
1 tsp vanilla extract
For the Cinnamon-Sugar Swirl:
1/4 cup (50g) granulated sugar
1 tbsp ground cinnamon
1 tbsp butter, melted
For the Cream Cheese Glaze:
2 oz (60g) cream cheese, softened
1/2 cup (60g) powdered sugar
1/4 tsp vanilla extract
1-2 tsp milk
Instructions
Preheat and Prepare : Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it lightly.
Make the Muffin Batter : In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, vegetable oil (or melted butter), egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be lumpy.
Prepare the Cinnamon-Sugar Swirl : In a small bowl, mix the granulated sugar and cinnamon. Set aside.
Assemble the Muffins : Divide half of the muffin batter evenly among the prepared muffin cups. Sprinkle the cinnamon-sugar mixture evenly over the batter in each cup. Drizzle the melted butter over the cinnamon-sugar layer. Top with the remaining muffin batter, dividing it evenly. Use a toothpick or skewer to gently swirl the layers for a marbled effect.
Bake the Muffins : Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Prepare the Glaze : In a small bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and milk until smooth and creamy. Adjust the milk as needed to achieve your desired consistency.
Finish and Serve : Drizzle the cream cheese glaze generously over the cooled muffins. Let the glaze set slightly before serving. Enjoy these warm or at room temperature for the best flavor!
