Ingredients:

2 ripe but firm avocados
1/2 cup panko bread crumbs
1/4 cup all-purpose flour
1 large egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Vegetable oil, for frying

Sriracha Aioli:

1/2 cup mayonnaise
1 tablespoon sriracha (or more, to taste)
1 tablespoon lime juice
1 teaspoon honey or maple syrup
1/4 teaspoon salt

Instructions:

1. Prepare the Avocados: Cut the avocados in half lengthwise, remove the pits, and scoop out the flesh. Cut each avocado half into 1/2-inch thick fries.
2. Prepare the Breading Station: Set up three shallow dishes. In the first, place the flour seasoned with salt, pepper, garlic powder, and onion powder. In the second, place the beaten egg. In the third, place the panko bread crumbs.
3. Bread the Avocado Fries: Dredge each avocado fry in the seasoned flour, ensuring it's fully coated. Dip the floured fry into the beaten egg, allowing excess to drip off. Finally, coat the fry completely in the panko bread crumbs, pressing gently to adhere.
4. Fry the Avocado Fries: Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot (a breadcrumb dropped in should sizzle immediately), carefully add the avocado fries in a single layer, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, until golden brown and crispy. Remove the fries from the skillet and place them on a wire rack or paper towel-lined plate to drain excess oil.
