Healthy & Refreshing Key Lime Chia Seed Pudding Breakfast Treat 💚🍋✨
Ingredients:
1/4 cup (45g) chia seeds
1 can (13.5 oz / 400ml) full-fat coconut milk
1/4 cup (60ml) fresh lime juice (from about 2-3 key limes or 1 large regular lime)
Zest of 1 large lime (or 2 key limes)
2-3 tablespoons maple syrup or agave nectar, or to taste
1 teaspoon vanilla extract
Pinch of salt
Optional Layers/Toppings: Crushed graham crackers (ensure vegan) or digestive biscuits, whipped coconut cream, toasted coconut flakes, lime slices
Directions:
1. In a medium bowl or large jar, combine the chia seeds, full-fat coconut milk, fresh lime juice, lime zest, sweetener (maple syrup or agave), vanilla extract, and pinch of salt.
2. Whisk everything together very well until thoroughly combined and no clumps of chia seeds remain.
3. Let the mixture sit for 5-10 minutes, then whisk again vigorously to break up any clumps and ensure even hydration of the chia seeds.
4. Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick and creamy.
5. Once thickened, stir the pudding well. Taste and add more sweetener or lime juice if desired.
6. To serve as parfaits: Layer the key lime chia pudding with optional crushed graham crackers/biscuits and whipped coconut cream in glasses or bowls.
7. Top with toasted coconut flakes and a small lime slice or extra zest before serving. Serve chilled.
