Stir-fried Noodles with Chicken 🍜
Ingredients:
8 oz egg noodles (or spaghetti)
1 lb boneless, skinless chicken breast, thinly sliced
2 tablespoons vegetable oil
1 cup shredded carrots
1 red bell pepper, thinly sliced
1 cup broccoli florets
3 green onions, chopped
2 cloves garlic, minced
1/4 cup low-sodium soy sauce
2 tablespoons oyster sauce (optional)
1 tablespoon cornstarch mixed with 2 tablespoons water
1 tablespoon brown sugar
1/2 teaspoon ground black pepper
Directions:
Cook the Noodles:
Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
Prepare the Sauce:
In a small bowl, mix the soy sauce, oyster sauce (if using), brown sugar, and black pepper. Stir in the cornstarch-water mix until smooth. Set aside.
Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for about 5-6 minutes, until cooked through. Remove from the skillet and set aside.
Sauté the Veggies:
In the same skillet, add the remaining tablespoon of oil. Add garlic, carrots, bell pepper, and broccoli. Stir-fry for about 4-5 minutes, until the vegetables are slightly tender but still crisp.
Combine Everything:
Return the cooked chicken to the skillet. Add the noodles and pour the sauce over the top. Toss everything together and stir-fry for 2-3 more minutes, until everything is well-coated and heated through.
Finish It Off:
Sprinkle with chopped green onions before serving.
