Easy Vegetarian Fritters with Carrot, Chickpea & Warm Spices 🌱
Ingredients:
1 can (15 oz / 425g) chickpeas, rinsed and drained
1 cup / 120g grated carrots
1/2 cup / 60g all-purpose flour (or chickpea flour for GF)
1/4 cup / 10g fresh cilantro or parsley, chopped
1 small onion, grated or very finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 large egg (or flax egg: 1 tbsp flaxseed meal + 3 tbsp water)
Olive oil or vegetable oil for frying
Directions:
1. In a bowl, mash the chickpeas roughly with a fork, leaving some texture.
2. Add the grated carrots, flour, chopped cilantro/parsley, onion, garlic, cumin, smoked paprika, salt, and pepper.
3. Add the egg (or flax egg) and mix everything until just combined into a thick batter. Don't overmix.
4. Heat about 1/4 inch (0.5 cm) of oil in a large skillet over medium-high heat. The oil is ready when a drop of batter sizzles immediately.
5. Carefully drop rounded tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon. Don't overcrowd the pan.
6. Fry for 3-4 minutes per side, until golden brown, crispy, and cooked through.
7. Use a slotted spoon to remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
8. Repeat with the remaining batter, adding more oil to the skillet if needed.
9. Serve hot with a dipping sauce like yogurt or tahini sauce.
