I’ve been off Keto for almost a month now after a measly 3 weeks on it. Mentally and physically exhausted from being a trucker’s wife with 3 small children, and let my will power go. I gained back the 7lb loss and added 6lbs. 🤦🏻‍♀️ my Psoriatic Arthritis that I’m on an injectable medication for is flaring and I had decreased pain during those 3 weeks!
I’m starting again next week and one thing I’m NOT giving up is my coffee creamer (please, no recommendations, I already have many) so instead of 20g carbs daily, I’m allowing myself 35 to give me room for the creamer. I will cut back the amount I’m using so hopefully I’ll get the number lower over time. I get up an hour before my kids and that time is basically all I have to myself. I cherish it. I need it. I don’t care if it takes me longer to lose the 70ish lbs I need to lose. It’s my vice lol
Anyways, this is one of my fave Keto lunches....Poblano pepper with cream cheese and seasoning. Oven at 400 for about 20-25mins. I had a small salad with it as well. Just trying to get my head back into the game. Keto on
