Chocolate Lava M&M Surprise Cookies
Ingredients:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup mini chocolate chips
1 cup chocolate hazelnut spread (like Nutella)
1/2 cup M&M candies
Directions:
In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Fold in the mini chocolate chips.
Scoop about 1 tablespoon of dough and flatten it slightly in your hand. Add a small dollop (about 1 teaspoon) of chocolate hazelnut spread in the center, then press a few M&M candies on top of the spread. Cover with another small piece of dough, sealing the edges to encase the filling. Roll into a smooth ball and place on a parchment-lined baking sheet. Repeat with the remaining dough.
Chill the stuffed cookie dough balls in the refrigerator for 20 minutes. Preheat your oven to 350°F (175°C).
Bake the cookies for 10-12 minutes, or until the edges are set and the tops look slightly cracked. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Serve warm for a gooey, lava-like surprise in the center, or enjoy at room temperature.
