Meatloaf with Mashed Potatoes and Gravy
Ingredients:
- For the Meatloaf:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 small onion, finely chopped
- 1/4 cup ketchup
- Salt and pepper, to taste
- For the Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- Salt and pepper, to taste
- For the Gravy:
- 2 cups beef broth
- 2 tbsp flour
- 2 tbsp butter
Instructions:
1. Make the Meatloaf:
- Preheat oven to 350°F (175°C).
- In a bowl, mix ground beef, breadcrumbs, milk, egg, onion, ketchup, salt, and pepper.
- Shape mixture into a loaf and place in a baking dish.
- Bake for 45-50 minutes or until cooked through.
2. Prepare Mashed Potatoes:
- Boil potatoes until tender, about 15-20 minutes.
- Drain and mash with milk, butter, salt, and pepper.
3. Make the Gravy:
- In a saucepan, melt butter and stir in flour, cooking for 1-2 minutes.
- Gradually whisk in beef broth and simmer until thickened.
4. Serve:
- Slice meatloaf and serve with mashed potatoes topped with gravy.
