Ingredients:

4 filet mignon steaks
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
2 shallots, finely chopped
2 cloves garlic, minced
1/4 cup brandy
1 cup heavy cream
2 tablespoons green peppercorns, drained
1 tablespoon Dijon mustard
Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Steaks: Season the filet mignon steaks generously with salt and freshly ground black pepper on both sides.
Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. Remove the steaks from the skillet and set them aside to rest.
Make the Sauce: Lower the heat to medium in the same skillet and add the unsalted butter. Once melted, add the finely chopped shallots and minced garlic. Sauté for about 2-3 minutes until softened.
