Ingredients
For the Honey Mustard Chicken
4 boneless, skinless chicken breasts
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper, to taste
Fresh thyme or parsley, for garnish (optional)
For the Garlic Mashed Potatoes
2 lbs (900g) potatoes, peeled and chopped
4 cloves garlic, peeled
1/2 cup milk (or cream)
4 tablespoons butter
Salt and pepper, to taste
For the Broccoli
4 cups broccoli florets
1 tablespoon olive oil
Salt and pepper, to taste
Instructions
Prepare the Honey Mustard Chicken
Preheat Oven: Preheat your oven to 400°F (200°C).
Make Marinade: In a bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper.
Marinate Chicken: Place the chicken breasts in a baking dish and pour the honey mustard mixture over them, turning to coat. Let marinate for at least 10 minutes.
Bake Chicken: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Prepare the Garlic Mashed Potatoes
Cook Potatoes and Garlic: In a large pot, add chopped potatoes and garlic cloves. Cover with water, season with salt, and bring to a boil. Cook until potatoes are fork-tender, about 15-20 minutes.
Mash Potatoes: Drain the potatoes and garlic. Return them to the pot, then add milk and butter. Mash until smooth and creamy. Season with salt and pepper to taste.
Cook the Broccoli
Sauté Broccoli: In a skillet, heat olive oil over medium heat. Add broccoli florets, season with salt and pepper, and sauté for about 5-7 minutes, or until bright green and tender-crisp.
Serve
Plate the Dish: Serve the honey mustard chicken alongside garlic mashed potatoes and sautéed broccoli. Garnish with fresh thyme or parsley if desired.
Tips and Variations
Add Spice: Include a pinch of cayenne pepper in the honey mustard mixture for a spicy kick.
Vegetarian Option: Substitute chicken with tofu or tempeh, marinating and baking in the same sauce.
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Enjoy your Honey Mustard Chicken with Garlic Mashed Potatoes & Broccoli – a delicious and comforting meal!
