Grilled Chicken with Creamy Mushroom Sauce & Spaghetti 🍝
Ingredients:
For the Chicken:
2 large chicken breasts, halved lengthwise
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp Italian seasoning
For the Mushroom Sauce:
1 tbsp butter
1 tbsp olive oil
8 oz mushrooms, sliced
2 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
½ tsp red pepper flakes (optional)
2 tbsp chopped parsley (for garnish)
For the Pasta:
8 oz spaghetti
1 tsp salt (for boiling water)
Directions:
1️⃣ Cook spaghetti according to package instructions. Drain and set aside.
2️⃣ Heat olive oil in a grill pan or skillet over medium heat. Season chicken with salt, pepper, garlic powder, and Italian seasoning.
3️⃣ Grill chicken for 4-5 minutes per side until golden brown and fully cooked. Remove and set aside.
4️⃣ In the same pan, melt butter and add olive oil. Sauté mushrooms for 3-4 minutes until soft. Add garlic, salt, and black pepper, cooking for another minute.
5️⃣ Pour in chicken broth and simmer for 2 minutes. Add heavy cream and Parmesan cheese, stirring until smooth. Simmer for 3-4 minutes until the sauce thickens.
6️⃣ Return the chicken to the pan, coating it with the sauce. Serve over spaghetti and garnish with parsley.
