Mediterranean Halloumi & Bean Bake

This Mediterranean Halloumi & Bean Bake is the perfect weeknight dinner for when you're short on time but still want something delicious and satisfying. With its rich combination of halloumi, beans, and sun-dried tomatoes, it's easy to prepare in just one pot and full of flavors that transport you to the Mediterranean. Serve it with crusty bread for a complete meal!

Cannellini beans - 1 can
Halloumi - 1 block
Smoked paprika - 1 tsp
Olives - Handful
White onion - 1
Garlic cloves - 3
Tomato puree - 1 tbsp
Sun-dried tomatoes - 1/2 cup
Yellow pepper - 1/2
Parsley for topping - As desired

Directions:
1. Fry the halloumi in a little olive oil and sprinkle over some smoked paprika. Cook until golden.
2. Remove the halloumi from the pan and set aside.
3. Finely chop the onions, yellow pepper, and garlic. Cook with a little oil until softened.
4. Add smoked paprika, beans, tomato puree, sun-dried tomatoes, and salt to taste. Cook for around 10 minutes.
5. Top with the cooked halloumi, herbs, and olives.
6. Serve with bread, roasted potatoes, or a salad.

Prep Time: 20 minutes
