Parmesan Crusted Chicken with Creamy Garlic Sauce
Ingredients:
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup panko breadcrumbs
2 teaspoons garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
1 egg, beaten
2 tablespoons olive oil
1/2 cup heavy cream
1/4 cup chicken broth
3 cloves garlic, minced
1 tablespoon butter
Fresh parsley for garnish
Directions:
Preheat your oven to 400°F (200°C).
In a shallow dish, combine Parmesan cheese, panko breadcrumbs, garlic powder, oregano, salt, and pepper.
Dip each chicken breast into the beaten egg, then coat thoroughly in the Parmesan mixture.
Heat olive oil in a large ovenproof skillet over medium heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
While the chicken bakes, make the creamy garlic sauce. In a small saucepan, melt butter over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
Pour in the chicken broth and simmer for 3-4 minutes, then stir in the heavy cream. Let it simmer for another 2-3 minutes, until thickened. Season with salt and pepper.
Once the chicken is done, remove from the oven and drizzle with the creamy garlic sauce. Garnish with fresh parsley.
