Banana Cottage Cheese Crustless Bread Minis

Ingredients:

2 ripe bananas, mashed
1 cup cottage cheese
1 ½ cups rolled oats
2 eggs
¼ cup honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon salt
Sliced banana for topping (optional)

Directions:

Preheat oven to 350°F (175°C) and lightly grease a muffin tin.
In a mixing bowl, mash bananas and add cottage cheese, eggs, honey, and vanilla. Mix well.
Stir in oats, cinnamon, baking powder, and salt until combined.
Divide the batter evenly into the muffin tin, filling each cup about ¾ full.
Top each with a banana slice and bake for 20-25 minutes, or until golden brown and firm to the touch.
