State Fair Funnel Cakes
Ingredients:
- 3 large eggs
- 1/4 cup sugar
- 2 cups milk
- 3 2/3 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- Vegetable oil for frying
Directions:
1. In a large mixing bowl, whisk together the eggs and sugar until well combined.
2. Add the milk and mix thoroughly.
3. In a separate bowl, sift together the flour, salt, and baking powder.
4. Gradually add the dry ingredients to the wet ingredients, stirring until you achieve a smooth batter with no lumps.
5. Heat vegetable oil in a deep skillet or fryer to 375°F (190°C).
6. Using a funnel or a piping bag with a large round tip, drizzle the batter into the hot oil in a circular motion to form a lattice pattern.
7. Fry the funnel cakes until golden brown, about 2-3 minutes per side, flipping carefully with tongs or a slotted spoon.
8. Remove the cakes from the oil and drain on paper towels.
9. Serve warm, dusted with powdered sugar or topped with your favorite syrup or fruit.
