Crab & Shrimp Stuffed Salmon Delight
Ingredients:
- 4 salmon fillets (6 ounces each)
- 1 cup lump crab meat, drained
- 1/2 cup cooked shrimp, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Lemon wedges, for serving
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a mixing bowl, combine the crab meat, chopped shrimp, cream cheese, Parmesan cheese, breadcrumbs, parsley, lemon juice, garlic powder, salt, and black pepper. Mix until well combined.
3. Place the salmon fillets skin-side down on a cutting board. Using a sharp knife, make a pocket in each fillet by slicing horizontally, being careful not to cut all the way through.
4. Stuff each salmon fillet with the crab and shrimp mixture, pressing gently to secure the filling.
5. Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the stuffed salmon fillets and sear for 3-4 minutes on each side until golden brown.
6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
7. Serve with lemon wedges on the side.
