Tiramisu Cookie Cups
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 1/4 cup heavy cream
- 2 tablespoons powdered sugar
- 1/4 cup strong brewed coffee, cooled
- 1 tablespoon cocoa powder, for dusting
- 1/4 cup mini chocolate chips (optional)
Directions:
1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, beat softened butter and granulated sugar until light and fluffy.
4. Add egg and vanilla extract to the butter mixture and beat until combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in mini chocolate chips if using.
7. Spoon the cookie dough into the mini muffin cups, pressing slightly to form a cup shape.
8. Bake for 12-15 minutes, or until the edges are golden brown.
9. Remove from oven and allow to cool completely in the tin, then gently remove cookie cups.
10. In a separate bowl, whisk together mascarpone cheese, heavy cream, and powdered sugar until smooth and slightly thickened.
11. Dip the top rim of each cookie cup briefly into the cooled coffee, or brush coffee inside the cup with a pastry brush.
12. Fill each cookie cup with the mascarpone mixture.
13. Dust the tops lightly with cocoa powder before serving.
