💚 Mint Chocolate Chip Cheesecake Dip 🍃
Ingredients:
8 ounces full-fat cream cheese, softened to room temperature
1 cup powdered sugar, sifted
1 teaspoon peppermint extract
½ teaspoon vanilla extract
2-3 drops green gel food coloring (optional)
1 cup cold heavy whipping cream
1 cup mini semi-sweet chocolate chips, divided
For Serving:
Graham crackers, vanilla wafers, pretzels, or fresh strawberries
Instructions:
Whip the Base: In a large mixing bowl, use an electric hand mixer to beat the softened cream cheese until it is completely smooth and free of lumps.
Sweeten and Flavor: Add the sifted powdered sugar, peppermint extract, and vanilla extract to the cream cheese. Beat on medium speed until the mixture is well-combined and smooth. If using, add the green food coloring and mix until the color is uniform.
Prepare the Cream: In a separate, chilled bowl, whip the cold heavy whipping cream on high speed until stiff peaks form.
Combine Gently: Add about one-third of the whipped cream to the mint-cream cheese mixture. Use a spatula to fold it in gently to lighten the base. Once incorporated, carefully fold in the remaining whipped cream until no white streaks remain.
Add Chocolate Chips: Reserve two tablespoons of the mini chocolate chips for garnish. Fold the remaining chocolate chips into the dip until they are evenly distributed.
Chill and Serve: Transfer the dip to a serving bowl, cover, and refrigerate for at least one hour to allow the flavors to meld and the dip to firm slightly. Just before serving, sprinkle with the reserved chocolate chips. Serve with your chosen dippers.
