Caramel Apple Jam
Ingredients:
- 6 cups finely diced peeled apples (about 4 medium-large Honey Crisp apples)
- 1/2 cup water
- 1/2 teaspoon butter
- 1 package Sure-Jell (powdered fruit pectin)
- 4 cups sugar
- 1 cup packed brown sugar
- 1/2 teaspoon ground cinnamon (heaping)
- 1/4 teaspoon ground nutmeg
Directions:
1. In a large saucepan, combine the diced apples, water, and butter. Cook over medium heat until the apples are tender, stirring occasionally.
2. Stir in the powdered fruit pectin and bring the mixture to a rolling boil.
3. Add both sugars, cinnamon, and nutmeg all at once, stirring constantly. Boil hard for 1 minute.
4. Remove from heat and skim off any foam that forms on top.
5. Ladle the hot jam into sterilized jars, leaving about 1/4 inch headspace. Wipe jar rims clean and seal with lids.
6. Process jars in a boiling water bath for 10 minutes to ensure proper sealing.
7. Let jars cool completely at room temperature. Store in a cool, dark place and refrigerate after opening.
