1 cup plain Greek yogurt (or sour cream)
2 large eggs
1Β½ cups mashed ripe bananas (about 3–4 medium bananas)
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
ΒΎ teaspoon fine sea salt
Optional: ΒΎ cup chopped walnuts or pecans, or Β½ cup mini chocolate chips
For the Brown Butter Glaze:

4 tablespoons unsalted butter
2 cups powdered sugar, sifted
1 teaspoon pure vanilla extract
1–2 tablespoons milk (whole or plant-based)
Instructions

Prep & Preheat: Position a rack in the center of your oven and preheat to 375Β°F (190Β°C). Lightly grease a 9Γ—13-inch baking pan with butter or nonstick spray, then line with parchment paper for easy removal (optional but recommended).
Make the Batter: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the Greek yogurt, eggs, mashed bananas, and vanilla; mix until smooth and fully combined.
Incorporate Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually fold the dry mixture into the wet ingredients, stirring just until no flour streaks remain. Avoid overmixing. If using, gently fold in nuts or chocolate chips.
Bake: Pour the batter into the prepared pan and spread evenly with a spatula. Bake for 23–28 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. Transfer the pan to a wire rack and let cool slightly while you prepare the glaze.
Brown the Butter: In a small saucepan over medium heat, melt the 4 tablespoons of butter. Continue cooking, swirling the pan occasionally, until the butter foams, then turns golden-brown with a fragrant, nutty aroma (about 3–5 minutes). Watch closelyβ€”it can burn quickly! Immediately remove from heat and let cool for 2–3 minutes.
Make the Glaze: To the warm browned butter, whisk in the sifted powdered sugar, vanilla, and 1 tablespoon of milk until smooth. If the glaze is too thick, add more milk, Β½ teaspoon at a time; if too thin, add a bit more powdered sugar.
