1 pre-made graham cracker crust (or homemade)
For the Cream Cheese Layer:
8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
1 cup whipped topping (Cool Whip) or homemade whipped cream
For the Strawberry Topping:
1 lb fresh strawberries, hulled and halved
¾ cup sugar
2 tbsp cornstarch
¾ cup water
1 tbsp strawberry gelatin mix (like Jell-O)
Directions:
Make the cream cheese filling: Beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping. Spread evenly into the pie crust and refrigerate.
Prepare the strawberry glaze: In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat until thick and clear. Remove from heat, then stir in strawberry gelatin until dissolved. Let it cool slightly.
Assemble the pie: Arrange strawberries over the cream cheese layer. Pour the cooled glaze evenly over the top.
Chill for at least 3 hours (overnight is best) before slicing.
