Country French Garlic Soup
Ingredients:
2 tablespoons butter
2 tablespoons olive oil
2 whole heads garlic (about 20 cloves), peeled
1 small onion, finely chopped
4 cups chicken broth
1 cup heavy cream
1/2 cup cream cheese
1 cup shredded Gruyère cheese
1 cup shredded Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
Fresh parsley, chopped (for garnish)
Crusty bread slices (optional, for serving)
Instructions:
1. In a large pot, melt butter with olive oil over medium heat. Add peeled garlic cloves and cook, stirring, until lightly golden and fragrant, about 5 minutes.
2. Add onion and cook for another 3 minutes until softened.
3. Pour in chicken broth, salt, pepper, thyme, and smoked paprika. Bring to a simmer and cook for 20 minutes, until garlic is very soft.
4. Use an immersion blender to puree the soup until completely smooth and creamy.
5. Stir in heavy cream and cream cheese until fully incorporated.
6. Add Gruyère and Parmesan cheeses. Stir until melted into a thick, velvety cheese base.
7. Taste and adjust seasoning as needed.
8. Serve hot, garnished with fresh parsley and optional toasted bread on the side.
